if you call a middle-aged male customer 'chief' or 'boss' or 'champ', are you
a)being friendly and respectful, or
b)being patronising and disrespectful?
Please answer carefully. If the majority says b), i will need to enact VIOLENT AND EXTREME revenge on the little cunt at the petrol station.

It's been a while since I was dealing with customers, but generally "sir" was for respect and anything else; boss, chief, etc. was for douchebags. Especially douchebags who walked in with a sense of entitlement.

I used to work in a call centre, and it amazed me at the amount of pet-names I was called. Dear, love, honey, son, pal, mate, dude, buddy, ducky (a personal favourite), hen, pet, petal, Jock, kid. Only one lady ever called me by my real name. I asked her out.

I think 'champ' is patronising.
It seems, the customers can be overly familiar with you, but be the same back can be considered overstepping the mark.
I use a shop where the 17 year old check out assistant calls me 'duck' and 'love'. Being much older, and a mother, I find it totally patronising. But I'd never complain.

Easy. If you're "Champ", "Chief", or "Boss", then he's "Runner-Up", "Brave", or "Minion".
Note: Chief/Brave is Americacentric Might be Chief/Drone or maybe Chief/*something with a lot of vowels in it* where you're from. Use your best judgement.
